Baked this banana cake for several occasions and my family and bf loved it! ๐ซถ๐ป
What you will need:
- 4 ripe bananas (I use MYS bananas, it is slightly sweeter than other bananas imo ๐คญ)
- 1/4 tsp baking soda
- 2 tbsp condensed milk
- 220g plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 170ml corn oil
- 5 eggs
- 135g brown sugar
- cinnamon powder (optional)
Steps:
- Mash 4 bananas using a fork, you can choose to mash it completely OR mash and leave abit of banana chunks so that when you eat the cake it will have the chunks inside ๐คญ
- Add 1/4 tsp baking soda, 2 tbsp condensed milk to the bananas and mix until combined
- In another bowl, sift 220g of plain flour, 1 tsp baking powder, 1/4 tsp salt then add 170ml of corn oil
- (optional) Add a sprinkle of cinnamon powder if you like that a lil extra sweetness
- Mix until combined
- Combine both bowls together, mix until combined
- In another bowl, add 5 eggs, use electric mixer on medium speed to mix then add 135g brown sugar, mix on high speed until the mixture is fluffy (it should look like picture 8)
*Note: have to mix for quite a while, took about 10minutes for me ๐ฅน
- Slowly combine the egg mixture to the banana mixture and stir until evenly distributed
- Preheat the oven at 170 degree celsius
- Bake the cake at 170 degree celsius for 45 minutes
*Note: This can make about two huge loaves of banana cake, which is quite a lot!!! You can half the recipe for smaller portions :-)
