Oh yes, it’s a thing. This Sierra Nevada IPA is such a great beer to cook with. I’ve made fish and chips with it also. Makes for a great beer batter. It has a slightly sweet taste to it. This soup is top 5 comfort foods and will go straight to your soul 🙌 full video available on TikTok 🥂
✨Wisconsin✨Beer Cheese Soup 🥳

Before Cooking:
Dice celery, onion, garlic
Ingredients:
Bacon
Celery
Onion
Butter
garlic
Flour
Chicken broth
Beer
Heavy cream
Worcestershire sauce
Dijon mustard
Cayenne pepper
Salt
Black Pepper
Cheddar Cheese
*Green onion for garnish
*turmeric for color
Cook some bacon in a large pot and set aside
With the remaining bacon grease in the same pot, sauté celery and onion until softened and season with S&P, then add butter and garlic and cook until melted and fragrant
While that’s cooking, shred cheese and set aside
Add flour to cooked vegetables and stir together so fully combined
Cook flour mixture until light golden brown then add chicken broth and stir until creamy
Add beer, cream, Worcestershire sauce, Dijon mustard, cayenne pepper, garlic and onion powder, paprika, *turmeric, and some of the bacon (save some for garnish later)
Bring to a boil, then reduce the heat and simmer for at least 15 minutes or until thickened (the longer the better - mine simmered for an hour before serving🧚)
Remove soup from heat and gradually stir in the cheese (don’t stir cheese while it’s boiling hot, it will make for a grainy soup)
Season with salt & pepper if needed, and garnish with the green onion and bacon
Serve with soft pretzels 🥂
