Taco Tuesday = Mexican food for dinner! 🌮🌯🫔🇲🇽

**this is MY take on this delicious dish. I am not claiming it to be the authentic style - just a quick and easy take on an awesome Mexican dish that my family and I love!**

Ingredients:

• 1lb ground beef

• 1 pack of taco seasoning

• 1 onion

• 1 bell pepper

• 2 cups diced yukon gold potatoes

• 1 15oz can tomato sauce

• 1 can of water

• 1 tsp caldo de tomate

• salt & pepper to taste

Directions:

• In a large, deep skillet (or pot), add ground beef, diced onion and bell pepper and sauté until beef is completely browned and veggies are tender.

• Then, add taco seasoning, caldo de tomate, tomato sauce, water and potatoes and bring to a boil.

• Stir occasionally and allow to lightly boil without a lid for about 30 min or until potatoes are fork tender and sauce has thickened.

I served mine with Spanish rice and cheese taquitos!
