Rosemary Focaccia Bread

Ingredients:

500g (4 cups) all-purpose flour

325ml (1 1/3 cups) warm water

7g (2 1/4 tsp) active dry yeast

2 tsp salt

2 tbsp olive oil (plus more for drizzling)

1 tbsp sugar

Fresh rosemary sprigs

Coarse sea salt, for sprinkling

Instructions:

1.In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 10 minutes until the mixture is frothy.

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture & 2 tbs of olive oil. Mix until a rough dough forms.Transfer the dough to mixer for about 7 minutes.

2.Let it rise for about 3 hours

3.Preheat your oven to 200C.Punch down the dough and transfer it to a greased baking sheet. Stretch and press the dough into a rectangular shape. Let it rise again for 30 minutes. After the second rise, use your fingers to press deep dimples into the dough. Drizzle olive oil over the top, then sprinkle with fresh rosemary and coarse sea salt.

4.Bake the focaccia in the preheated oven for 25 minutes until the top is golden brown.

5.Remove from the oven and let cool.Drizzle a little more olive oil over the top. Serve warm.
