This is one of my favorite dishes that my mom and grandma would make when I was little. Itโs not the quickest recipe but it tastes amazing!! It can also be a really fun activity to roll up the leaves with your friends or family.
Ingredients:
๐ธ olive oil
๐ธ 2 cups uncooked rice
๐ธ 1 chopped onion
๐ธ ยฝ cup fresh herbs (mint, dill, or any others you like)
๐ธ 8 cups vegetable broth (divided)
๐ธ ยฝ cup fresh lemon juice (divided)
๐ธ 60-70 fresh grape leaves
๐ธ 1 cup olive oil
1๏ธโฃ Heat up a little olive oil in a large pan and sautรฉ your rice, onion, and herbs until the onions get soft.
2๏ธโฃ Pour in half of the vegetable broth, then reduce the heat and let it simmer until the rice is almost cooked (10ish mins). Stir in half of your lemon juice and remove from the heat.
3๏ธโฃ Soften the grape leaves by briefly dipping them in hot water (about 10 seconds), then pat them dry.
4๏ธโฃ Lay out a grape leaf with the shiny side down. Spoon some of the rice mixture onto the leaf's stem end, fold both sides towards the center, and then roll it up. Tightly pack your rolled leaves in a pot.
5๏ธโฃ Pour the olive oil and remaining lemon juice in to the pot. Pour in the rest of the vegetable broth until the leaves are covered. Put the pot back on the stove with a cover and simmer for about an hour, but don't let it boil.
Once you take it off the heat wait at least 30 minutes before serving. Some people like them warm but I personally enjoy it the most when theyโre cold the next day!
