Whipped Feta and Ricotta Bruschetta dip with Fresh Tomatoes 🍅

Ingredients

For the Fresh Tomatoes

Cherry Tomatoes

Garlic Cloves (minced)

Extra Virgin Olive Oil

Salt

Ground Black Pepper

For the Whipped Feta and Ricotta

Crumbled Feta

Ricotta

Garlic Clove

Extra Virgin Olive Oil

Salt

Ground Black Pepper

For the Crostini

French Baguette

Extra Virgin Olive Oil

Instructions

For the Fresh Tomatoes

In a medium sized bowl, add the cherry tomatoes, garlic, olive oil, salt, and pepper. Toss the ingredients together until they are evenly coated then set aside.

For the Whipped Feta and Ricotta

Place the feta, ricotta, garlic, olive oil, salt, pepper, into a food processor. Blend until the mixture is smooth and creamy. Pour the mixture into a bowl and set it aside in the fridge until ready to use.

For the Crostini

Preheat the oven to 400˚F. Line a sheet tray with aluminum foil or parchment paper.

Cut the baguette into slices. Arrange the slices in a single layer onto the sheet tray. Lightly drizzle the tops with olive oil. Bake for about 5-8 minutes until the bread is toasted and lightly golden brown

To assemble the bruschetta dip, place a scoop of the whipped feta and ricotta mixture into the bowl and spread. Then place fresh tomatoes mixture on top of the cheese mixture. Drizzle the bruschetta dip with the balsamic then place a piece of basil on top. Enjoy! 🫰🏼
