🔶You’ll need (for 12 muffins):
🔸For the muffins:
2 ripped bananas, mushed
60g (about 1/4 cup) sugar *This recipe makes muffins with less sugar. For a regular sweetness level, just add 60g MORE sugar*
1 egg
65g (about 1/3 cup) vegetable oil
70g (about 1/4 cup) milk
255g (about 1 + 1/2 cup) all-purpose flour
4g (about 1 teaspoon) baking powder
4g (1 teaspoon) baking soda
4g (1 teaspoon) cinnamon powder
A pinch of salt
55g (about 2/3 cup) walnuts, lightly chopped
🔸For the topping:
22g (about 2 tablespoons) unsalted butter, melted
45g (about 1/4 cup lightly packed) brown sugar
55g (about 2/3 cup) walnuts, lightly chopped
🔶You’ll do:
1. In a mixing bowl, add all the ingredients for the muffins one by one, and mix well. Preheat the oven to 350°F and pour the batter evenly into a lined muffin pan.
2. To make the topping, add all ingredients to a small bowl, and mix well. Sprinkle the topping on top of the muffins. Bake at 350°F for 20-25 minutes. Transfer muffins to a cooling rack to cool.
