A quick & easy lunch/dinner idea for the busy days! Simply throw some cubed acorn squash in the uncooked rice and cook them in the rice cooker as usual. After the rice is done, fry a few bacon strips in a pan then dump some of the oil out. Add some chopped onion in the pan and fry them for another minute. In the same pan, add the cooked squash & rice and vegetables of your choice (I just microwaved a cup of frozen mix vegetables), keep frying. At the end, season the fried rice with salt, pepper, and soy sauce.
Tip: You can make the squash & rice the day before, store them in the refrigerator and let them dry out a little bit before frying them.
