I am not someone who is able to meal prep. I've tried so many times, but I get overwhelmed with all the steps, and then I don't want to have leftovers.
I've found one of the best ways I can combat this is by prepping high effort ingredients instead. I'm making bbq chicken flat breads for lunch this week, so this is the only ingredient I need to prep!
This is about 2.25 lbs of chicken breast cooked and shredded in 30 minutes. It made about 9 servings of chicken for me to use for lunch and snacks during the week. And honestly how I make almost all my chicken anyways.
I put my chicken in the airfryer with Salt, pepper, onion powder, garlic powder, and Paprika. Into the air fryer @430 for 25 minutes, but depending on the thickness, you may need to go longer. Then I shredded it in my kitchenaid before it goes in the fridge.
