Ingredients:
• Pasta of your choice
• Pork Chops, cut into bite-sized pieces
• Shrimp, peeled and deveined
• Sundrop tomatoes
• Heavy cream
• Cream cheese
• Grated Parmesan cheese
• White wine
• Butter
• Olive oil
• Onion
• Salt and pepper
• Red pepper flakes
• Dried parsley
Instructions:
1. Cook the Pasta:
• Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
2. Prepare the pork and Shrimp:
• Heat a large skillet over medium-high heat. Add a tablespoon of butter and a drizzle of olive oil.
• Season the pork pieces with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
• In the same skillet, add the shrimp. Cook until they are pink and opaque, about 2-3 minutes per side. Remove and set aside with the chicken.
3. Prepare the Sauce:
• In the same skillet, add a splash of white wine to deglaze the pan, scraping up any browned bits from the bottom. Let the wine simmer for 1-2 minutes to burn off the alcohol.
• In a blender, combine the cream cheese, heavy cream, grated Parmesan cheese, sundrop tomatoes, and a quarter of an onion. Blend until smooth.
• Pour the blended sauce into the skillet with the white wine. Add a tablespoon of butter and stir to combine. Let it simmer over medium heat until the sauce thickens slightly, about 3-5 minutes.
4. Combine Everything:
• Add the cooked pasta to the skillet, tossing to coat it in the sauce.
• Add the cooked pork and shrimp back to the skillet, stirring to combine and heat through.
• Season with salt and pepper to taste.
5. Garnish and Serve:
• Transfer the pasta to serving plates.
• Garnish with red pepper flakes and dried parsley.
• Serve immediately and enjoy your creamy pork and shrimp pasta with sundrop tomatoes!
