Skip Tsujihan in Japan; this one in SG is BETTER

TLDR: this Tsujihan-inspired bowl at Standing Sushi Bar in Singapore is much nicer than the viral Tsujihan in Japan, and you can enjoy this without queueing! ;)

My experience with Tsujihan was bad as it wasn’t fresh and the texture was just all mushy (thank goodness I went at an odd timing of 4:30pm and only queued 20 min), while the sashimi chunks in Standing Sushi Bar’s Tsujihan-inspired bowl was ✨FRESH✨ and the sashimi chunks had a nice bite to it! The uni was so fresh, creamy and briny!!! 🥹🧡 I wished they gave more uni 🙈

They have a total of 3 different bowls under this newest series of Tsujihan-inspired bowls (swipe to the end for the menu), with the “Mt Fuji” bowl being the most premium one comprising tuna, hamachi, surf clam, squid, salmon, swordfish, sweet shrimp, scallop, snow crab, fish roe and uni. Really is 好料多多 😂 It’s served with a side of hamachi sashimi in goma-miso sauce. Halfway into your bowl, you can ask for yuzu dashi broth to be poured into your rice. The yuzu dashi broth was normal to me - nothing to shout about.

Had the unagi dashi maki tamago don too and omg it was a highlight for me. JUST LOOK AT HOW HUGE THE UNAGI IS (bigger than my hand… 🫣). But you know… it’s not all about the size 🙃 What’s more important is that it’s also fresh and tender!!! 🤤 AND NO BONES (I hate unagi with bones 💀). The unagi was glazed with a sweet and savoury sauce. The tamago at the side also had a delicate sweetness and moistness 😍

And don’t worry although it’s called Standing Sushi Bar, there are seats for you to sit and enjoy your meal!! 🤪
