Came home and wanted to whip up something quick for a 30-minute lunch.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika
- 4 cups mixed greens (romaine, spinach, or arugula)
- 1 cup cherry tomatoes, halved
- 1 yellow bell pepper, sliced
- Balsamic vinaigrette or dressing of your choice
What to add, but I didn’t have:
- crumbled feta cheese
- cucumbers
- slice avocado
Instructions:
1. Preheat your grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt, pepper, garlic powder, and paprika.
Grill the chicken for about 6-7 minutes on each side or until fully cooked. Once done, let it rest for 5 minutes, then slice it into strips.
2. In a large bowl, toss the mixed greens, cherry tomatoes, and yellow bell pepper. Add the grilled chicken slices on top.
3. Drizzle your favorite balsamic vinaigrette or dressing over the salad.
4. Serve immediately and enjoy your fresh, healthy, and delicious grilled chicken salad!
