After getting a few DMs asking about my corn salsa recipe, I thought I’d finally share it with you all! 😄 This is version of the chipotle corn salsa. Super easy, fresh, and slightly spicy, perfect topping for your tacos, burrito bowls, or just for scooping with chips! Plus, it takes minutes to make at home. 🙌

Ingredients:

- 2 cans of the15 oz sweet can corn or fresh corn

- 1/2 red onion (finely chopped)

- 1 jalapeño (seeded and finely chopped)

- 1/4 cup fresh cilantro (chopped)

- 1/4 cup lime juice (freshly squeezed)

- 1 tbsp olive oil

- 8 cherry tomatoes diced (I use the flavor bomb tomatoes from Publix/Walmart) or you can use 1/2 of a big tomatoes

- Salt and pepper to taste

Instructions:

1. Cook the corn: Drain your can corn (If you want a char to your corn, you can give it a quick sauté in a pan with olive oil for a few minutes)

2. Combine the ingredients in a bowl, mix together the corn, red onion, jalapeño, and cilantro.

3. Squeeze 1/4 cup of the lime juice then season with salt and pepper. Mix well to combine all the flavors.

4. This is optional - Chill and serve: Let the salsa sit in the fridge for about 20 minutes to let the flavors marinate with each other, or enjoy it immediately!
