I like to make this recipe when I want a quick and healthy lunch or dinner. This recipe makes one serving but you can multiply it to make more servings if you are cooking for more people.
INGREDIENTS
-1 medium zucchini
-7-10 raw shrimp
-1 Tbsp olive oil
-1 garlic clove
-1 Tbsp butter
-1/2 lemon, juice and zest
-1 Tbsp chopped parsley
-salt and pepper
RECIPE
1) Make zucchini noodles. You can use a spiralizer but I just make mine using a veggie peeler and a knife, it’s a little more time consuming but it works. First I use the peeler to cut wide strips of zucchini, then I cut them into noodles.
2) Heat oil in a large pan over medium heat and cook shrimp on both sides. Remove from the pan.
3) Add garlic, butter, lemon and simmer for 2-3 minutes.
4) Add zucchini pasta, parsley and toss. Then add the shrimp back in and serve.
