Grew up eating sopa de fideo and this is the exact same recipe except I used conchitas instead of fideo

1. Chop onion, garlic, tomato, green bell pepper (you could also include potatoes or carrots)

2. Heat up oil at medium/low heat and add onion, garlic, bell pepper (I didn’t have any today but I always add this), and your pasta of choice (there are so many to choose from like fideo, estrellitas, abcs, codito, etc) and cook until lightly browned.

3. Once browned, add water (about 8 cups), tomato, cilantro, your extra veggies and spices. You’ll need cumin (1-2 tsp) and tomato bouillon (I like my soup full of flavor so I add about 4-7 tablespoons. Sometimes less, sometimes more). Add about 2 tbsp of tomato sauce (NOT tomato paste).

—🍅in step 3 I’d recommend starting with the lower amount of tomato bouillon and add more to your taste so your soup doesn’t end up too salty for you🍅—

4. Mix your soup and carefully taste it. Adjust your flavor with more seasoning or if too salty just add a little more water.

5. Once you’ve perfected your flavor, cover and let it cook at medium-medium/high for about 8 minutes. Then uncover and lower heat to medium/low for another 6 minutes.

6. Once your pasta is cooked, remove from heat and leave it covered. Now, you could serve, add cilantro, queso fresco, and lime juice (all optional but recommended fresh lime juice for sureeee) OR you could make your quesadillas to dip!

*Optional*

For your quesadillas you’ll need queso fresco and corn tortillas. Heat up tortillas (I like mine a little crispy), add sliced queso and fold. Now just dip and enjoy your delicious sopa 😋
