I was craving Chipotle the other night but I had tons of leftover rice and knew I could just make it myself and that's what I did. Don't get me wrong, I love Chipotle for a quick and cheap dinner idea but it usually leaves me feeling icky. I'll typically eat it once every few months but it's not something that is my go-to. This bowl is has similar ingredients to the Chipotle veggie bowl! Adjust the ingredients as needed.
Ingredients:
4 small bell peppers
1/2 small red onion
1 cup lettuce
1/2 cup rice
1/2 avocado
1 can black beans (drained)
Siete taco seasoning (the absolute bestt - what I have stored in the mini jar pictured above)
1 hot pepper
1 small tomato
1 lime
Steps:
1. Cook the bell pepper and onion in a dash of oil and 1-2 tsp of taco seasoning.
2. Once the veggies are done, remove them and set to the side. Cook the beans the same way but add juice of 1/2 lime.
3. Cook your rice according to instructions.
4. Chop the lettuce, spicy pepper, avocado, and tomato.
5. Combine everything to a bowl and top with hot sauce and red pepper flakes.
6. Squeeze some lime on top!
