### Louisiana Red Beans Recipe

#### Ingredients:

- 1 pound dried red beans (or 2 cans of red beans, rinsed and drained)

- 1 onion, diced

- 1 green bell pepper, diced

- 1 celery stalk, diced

- 3-4 cloves garlic, minced

- 1 pound beef sausage (or your choice of sausage), sliced

- 4 cups beef broth

- 1-2 drops of concentrated crawfish boil seasoning (adjust to taste)

- 1 teaspoon onion powder

- 1 teaspoon garlic powder

- 2 teaspoons Cajun seasoning or Tony seasonings(adjust to taste)

- 1 teaspoon paprika

- 1 bay leaf

- Salt and pepper to taste

- Cooked white rice, for serving

- Chopped green onions for garnish

#### Instructions:

1. **Prepare the Beans**: If using dried red beans, rinse and soak them in water overnight. Drain before cooking. If using canned beans, you can skip this step.

2. **Cook the Vegetables**: In a large pot or Dutch oven, heat a little oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

3. **Add the Sausage**: Add the sliced beef sausage to the pot and cook until it’s browned, about 5 minutes.

4. **Add Beans and Broth**: Stir in the soaked and drained red beans (or canned beans), beef broth, onion powder, garlic powder, Cajun seasoning, paprika, and the bay leaf. Add 1-2 drops of the concentrated crawfish boil seasoning.

5. **Simmer**: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours (or 30 minutes if using canned beans), stirring occasionally. If the mixture becomes too thick, add more broth or water as needed.

6. **Season to Taste**: Once the beans are tender, taste and adjust the seasoning with salt, pepper, and additional Cajun seasoning if desired. Remove the bay leaf before serving.

7. **Serve**: Spoon the Louisiana red beans over a bed of cooked white rice and garnish with chopped green onions.
