### Spaghetti Squash with Sautéed Vegetables and Tomato Basil Sauce

- **For the Spaghetti Squash:**
- 1 medium spaghetti squash
- 1-2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- **For the Sautéed Vegetables:**
- 1 cup mushrooms, sliced
- 1 bell pepper, chopped (any color)
- 1/2 cup onion, sliced
- 1-2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp Cajun seasoning (or your choice of seasoning)

- **For the Sauce:**
- 2 cups tomato basil spaghetti sauce (store-bought or homemade)
-jalapeño peppers 🌶️ your choice
- **For Topping:**
- 1 cup shredded cheese (mozzarella or your choice)
#### Instructions:
1. **Prepare the Spaghetti Squash:**
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside of each half with olive oil, and sprinkle with Italian seasoning, salt, and pepper. Rub the seasoning in to coat evenly.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the flesh is tender and easily shreds with a fork.
2. **Sauté the Vegetables:**
- While the squash is baking, heat olive oil in a large skillet over medium heat.
- Add the sliced mushrooms, chopped bell pepper, and sliced onion. Sauté for about 5-7 minutes, or until the vegetables are tender.
- Stir in garlic powder, onion powder, paprika, and Cajun seasoning. Cook for an additional 2-3 minutes until fragrant. Remove from heat.
3. **Combine and Serve:**
- Once the spaghetti squash is cooked, use a fork to scrape the flesh, creating spaghetti-like strands.
- In a large bowl, mix the spaghetti squash strands with the sautéed vegetables and tomato basil sauce until well combined.
- If desired, place the mixture back into the squash halves and top with shredded cheese.
- Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
