Bunny-inspired pastry twists for Easter 🌸🫐

- 1 sheet puff pastry

- 1/4 cup blueberry chia jam (recipe below)

- 1/4 cup plain coconut yogurt

1. Preheat oven to 400F

2. Spread chia jam on half of puff pastry, then fold in half and cut into thin strips

3. Stretch each strip of pastry to maximize length, then fold in half and twist twice to make a bunny shape with ears

4. Bake for 20 mins or until golden, let cool and then pipe yogurt on for tails just before serving 🤭

Blueberry chia jam

- 1 cup frozen blueberries

- 1 tbsp chia seeds

1. Add blueberries to saucepan over low heat, then add chia seeds and stir as berries thaw.

2. Raise heat to medium and allow mixture to thicken as berries release moisture.

3. Once reaches jam-like consistency, add to Tupperware or mason jar and store in fridge to use during the week - great on toast, as an oatmeal topping, or in these twists.
