BANANA OATMEAL BREAKFAST COOKIES! ✨🍌 This is an easy recipe for when you’re not sure what to do with your brown bananas. They’re a delicious little treat that tastes like banana bread, with the added whole grain + fiber + texture of oats (and some chocolate of course hehe). Grab the recipe below!
Makes 30 small cookies
Wet ingredients:
* 2 large ripe bananas, mashed
* ⅓ cup runny peanut butter
* ¼ cup brown sugar replacement (I used splenda magic baker) or sub maple syrup
* 1 egg
* 1 teaspoon vanilla
Dry ingredients:
* 1 1/3 cup flour
* 1 cup quick oats
* ½ teaspoon baking powder
* ½ teaspoon baking soda
* ½ teaspoon salt
* 1 teaspoon cinnamon
* ½ cup chocolate chips (optional - If following WW use a sugar free option like Lily’s)
Directions:
* Preheat the oven to 350F.
* Mash bananas, then add peanut butter, egg, vanilla, and brown sugar replacement. Whisk together all dry ingredients in a separate mixing bowl.
* Add the dry ingredients to the wet and mix together until you have a uniform batter.
* Fold in the chocolate chips.
* Use a small cookie scoop to form the cookies and add to a baking sheet lined with parchment paper or silicone baking mat.
* Press down to flatten (I use wet hands so it doesn’t stick).
* Bake 8-10 min, until bottoms are lightly browned. Enjoy!
