Lemon blueberry bread is so delicious!! Everyone loved it. It’s so easy to make and you probably already have these simple ingredients in your kitchen. Throw them all together and into the oven and now you’ve made a fancy bread - much healthier than store bought with all the added preservatives and things. Hope you enjoy!
All you need is:
For the bread -
1 1/2 cups all purpose flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
3 eggs
1 cup plain Greek yogurt (or sour cream)
1 teaspoon vanilla
1/2 cup oil
2 tsp lemon juice
1 1/2 cup blueberries
1 tablespoon flour to cover blueberries
For the glaze-
3 tablespoons lemon juice
1 cup powdered sugar
Directions:
Mix the dry ingredients in one bowl
Flour, salt, sugar, baking powder
Mix the wet in a separate bowl
Eggs, yogurt, vanilla, oil, lemon juice
Slowly add the wet ingredients into the dry and mix until everything is combined
You can use a mixer but I just hand mix
Coat the blueberries in the tablespoon of flour and then slowly fold them into the batter
Then grease a loaf pan and add the bread mix
Bake at 350 for 50 minutes to an hour.
Mine was turning golden brown at 45 minutes and I took it out at 50 minutes so just watch it and bake until a toothpick is poked through and comes out clean.
For the glaze add the lemon juice and powdered sugar to a small skillet and bring to a simmer
Let the bread cool before covering with the glaze
