Ingredients:
• 2 tablespoons olive oil
• 1 lb jumbo shrimp, peeled and deveined
• 16 ounces 50% less fat cream
• 16 ounces penne pasta
• 1 green bell pepper, diced
• 4 cloves garlic, minced
• 1 sweet onion, finely chopped
• ¼ teaspoon dried thyme
• ½ teaspoon dried oregano
• Fresh parsley, chopped (for garnish)
• 2 cups broccoli florets, uncooked
• 2 teaspoons lime juice or lemon juice
• Salt, to taste
• ½ teaspoon black pepper
Instructions:
1. Cook Pasta: Boil penne until al dente, drain, and set aside.
2. Sauté Vegetables: Heat olive oil in a skillet, sauté diced green pepper, onion, and garlic until softened.
3. Cook Shrimp: Add shrimp, season with salt and pepper, cook until pink, then remove from skillet.
4. Make Sauce: Pour cream into the skillet, add thyme and oregano, simmer until thickened.
5. Add Broccoli: Stir in broccoli florets, cook until tender.
6. Combine: Return pasta and shrimp to the skillet, add lime juice, and toss everything together.
7. Serve: Garnish with fresh parsley and serve hot.
