Ingredients
For the cake
-5 ripe bananas
-1 egg
-1/4 cup coconut oil
-3 tbsp maple syrup
-1 tsp vanilla extract
-1 1/3 cup white whole grain flour
-1 tsp baking soda
-1/4 tsp salt
-1/2 tsp cinnamon
For the milk mixture
-1/2 cup evaporated coconut milk
-1/4 cup sweetened condensed coconut milk
-2 tbsp coconut milk
-pinch of salt
-1 tsp vanilla extract
To top:
-coconut whipped cream
-cinnamon
Method:
Preheat your oven to 350° F. Mash your bananas and stir together with the remaining wet ingredients. Fold in the dry ingredients until just combined. Grease 5 mini loaf pans with nonstick spray and line with parchment paper. Pour in the batter and bake for 20-22 minutes until a toothpick comes out clean.
Cool the cakes completely. Leave them in their pans.
To make the milk:
whip together all ingredients until smooth. Poke the cakes with a skewer then pour the milk mixture overtop. Let sit for a few hours.
