LEMON CUPCAKES

Spring is right around the corner and these cookie bars are just what you need to start it out the right way!

#recipe details

-1 cup almond flour

-1/2 cup oat flour

-3 tbsp coconut flour

-1/4 tsp baking soda

-pinch of salt

-1/4 cup applesauce

-1/4 cup coconut sugar

-1 egg

-2 tbsp maple syrup

-2 tbsp honey almond butter

-1 tsp vanilla extract

-1/2 tsp lemon extract

Preheat your oven to 350° F. Grease a muffin pan with nonstick spray and line it with parchment paper liners.

Mix together all the ingredients until a thick and sticky dough forms. Pour the batter into the liners .

Bake for 18-20 minutes until lightly golden.

Let cool in the pan for 30 minutes before transferring to a wire rack to cool completely.

To make the frosting:

-1/4 cup grassfed butter

-1/3 cup pasture raised cream cheese

-1/4-1/3 cup raw honey

-1/4 tapioca flour

-1/4 tsp vanilla extract

-1/4 tsp salt
