For the brownies:
-1 cup mashed sweet potatoes
-2/3 cup coconut sugar
-1/4 cup applesauce
-1/2 cup creamy peanut butter
-1 flax egg
-1 tsp vanilla extract
-1/2 cup oat flour
-1/2 cup cocoa powder
-1 tsp baking soda
- pinch of salt
For the frosting:
-1 cup plain coconut yogurt
-1/2 cup creamy peanut butter
-1/4 cup maple syrup
-pinch of salt
-1 tsp vanilla extract
-chopped peanut butter cups to top
Method:
Preheat the oven to 350° F. Grease an 8x8 baking pan with nonstick spray and line it with parchment paper. To make the brownie batter, mix together the wet ingredients, then fold in the dry. Pour the batter into the pan and spread to the edges with a spatula. Bake for 20-25 minutes until just set. Let cool completely while you make the frosting.
Using a handheld mixer whip together all the frosting ingredients until fluffy. Top the cooled brownies with the frosting and chopped peanut butter cups. Cut into pieces and enjoy! 🤍🤍 #lemon8food #dessertrecipes
