there have been so many biscoff related recipes coming out recently but when biscoff cake was a first for me. The ingredients were relatively simple so I decided to give it a try! recipe’s from
catherinezhang!
INGREDIENTS:
75g Lotus biscoff cookies
240g All-purpose flour
2 ½ tsp Baking powder
Pinch of salt
135g Light brown sugar
65g Granulated sugar
80g Vegetable oil
75g Biscoff spread
95g Greek yogurt
3 Large eggs
STEPS:
1. Preheat an oven to 180C
2. Combine the brown sugar, granulated sugar, and oil, and whisk until combined
3. Add the eggs, yogurt, and biscoff spread, whisk until smooth
4. Sift in the biscoff cookie crumbs, flour, baking powder, and salt, and mix until just combined
5. Pour the cake batter into the lined cake pan and bake for 30 minutes, or until an inserted toothpick comes out clean
6. Remove from the oven and cool on a wire rack
7. Top with more melted biscoff
The cake was expectedly good and didn’t feel as sinful as biscoff cookies or brownies..I would cut the sugar in future because the biscoff spread on top adds quite abit of sweetness too but other than that, the recipe takes about an hour so it for sure a quick recipe to whip up!
