Last week I had some leftover ground beef and some random things in my refrigerator and was trying to come up with something to make for lunch!

When I saw the pickles, I knew what I had to do, and the burger salad came to life!!

Ingredients:

- 1lb ground meat (I chose ground beef)

- 1 head romaine

- 4 cups spring mix

- 1/2 red onion

- dill pickles

- banana peppers

- feta cheese (I got fat free)

Directions:

- cook ground mean in a pan until it’s done

- chop salad toppings: banana peppers, pickles, red onion

- assemble salad

- top with feta cheese

- I plan to use Trader Joe’s magnifisauce as my dressing but you can use whatever calls your name!!

Truly this salad is so yummy, but also very customizable! Don’t like banana peppers? Sub for tomato! Don’t like feta? Swap for cheddar! This is the ultimate what-do-I-have-left-in-the-fridge meal prep 😋
