Zucchini Lasagna Roll Ups

3-4 zucchini (If large 3 large ones is fine) sliced lengthwise - If you have mandolin you will get the perfect slice or if you鈥檙e good with a knife, you want to make sure you can roll up!

Kosher salt and black pepper - garlic powder, paprika, oregano.

1 tablespoon olive oil

1/2 pound ground hot Italian sausage

1/2 pound ground turkey

1 yellow onion

1/2 small eggplant

1/4 tsp Red Pepper Flakes

15 oz ricotta cheese (I used a whole milk one)

2 cup freshly shredded Parmesan cheese

1 large egg

4 cloves garlic, minced

Your favorite pasta sauce, divided

2 cups shredded mozzarella, divided

1 cup grated Parmesan cheese

* Take your mandolin and slice your zucchini, your onion and with a knife thinly slice the eggplant

* With your baking sheet, lay out your slices of zucchini (I suggest putting down a paper towel) and sprinkle salt on each side and sit out for 15-20 mins.

* Preheat your oven to 400潞F

* In your large skillet heat your olive oil, and just when it starts to glisten add your minced garlic, eggplant slices and sliced onion and sweat them down (add your seasoning S&P, GP, Pap & Oregano 馃尶)

* Add in your sausage and your ground turkey and mix in with the eggplant and onion. Browning the meat.

* While the meat is cooking in a medium bowl mix together your ricotta, pinch of salt and pepper, red pepper flakes, 1/2 cup mozzarella, 1/2 cup Parmesan cheese (shredded), 1/2 cup of grated Parmesan cheese and 1 egg. Mix together well and set aside.

* In your baking dish you pour a little bit of your tomato sauce in the bottom and add the rest to the browned meat.

* Take each of the zucchini slices and spread the ricotta mixture evenly on each slice. Take a spoonful of your meat mixture and spread on top of the ricotta mixture. And roll up and place in your baking sheet or skillet. Continue to do that until you have used all your zucchini slices.

* After you鈥檝e placed all of your rolls up in your pan/skillet your sprinkle the remainder of the mozzarella cheese and grated Parmesan.

* Place in the oven for 25-30 mins although I feel 27-28 mins is your sweet spot to make sure it鈥檚 nice and

golden brown!
