These Peanut Butter and Jelly Cookies are reminiscent of your favorite childhood sandwich, the classic flavor pairing, reimagined into a delicious chewy cookie form.

Ingredients needed:

½ cup unsalted butter room temperature

1 cup granulated sugar

½ cup light brown sugar

2 large eggs

1 teaspoon vanilla extract

½ cup creamy peanut butter

2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon kosher salt

½ cup raspberry jelly

Directions:

1. Preheat your oven to 350℉

2. In a large bowl cream together the room temperature butter and sugars until well combined.

3. Add eggs and vanilla to the butter and sugars and mix together until combined.

4. Mix in the peanut butter.

5. In a separate medium bowl combine the dry ingredients – flour baking powder and salt.

6. Pour flour mixture into peanut butter mixture and fold together with a spatula until just combined.

7. Dollop the jam around the top of the peanut butter dough.

8. Using 4-5 folding motions mix the jam into the dough while still leaving ribbons.

9. Using a large cookie scoop (3 tbsp, size 20) scoop dough onto a prepared baking sheet lined with parchment paper at least 2 inches apart.

10. Bake 15 minutes until the edges of the cookies are golden brown and the center is just set. Let cool for 5 minutes on the baking sheet then transfer to a cooling rack to cool completely (or eat warm).
