1. Drain the hearts of palm and press them into fish shapes.

2. Squeeze fresh lemon juice over the hearts of palm.

3. In a bowl, mix together Himalayan salt, black pepper, garlic powder, onion powder, and Old Bay seasoning .

4. Coat the hearts of palm in the seasoning mixture, then dip them into cornstarch or unbleached flour, shaking off any excess.

5. Heat avocado oil in a frying pan over medium heat.

6. Fry the hearts of palm in the hot oil until golden brown on each side.

7. While the hearts of palm are frying, butter your bread slices and toast them in a separate pan until golden brown.

8. Place the fried hearts of palm on the toasted bread slices and adding your choice of toppings.
