Perfect healthy snack or breakfast (or dessert!)
Recipe:
- What I Used
3c peanut butter (extra chunky)
3c quick oats
1/2c honey
1/4c maple syrup
1/3c chia seeds
1/3c chocolate protein powder
1/2c granola
1/3c chocolate chips
2tsp nutmeg
- How-To
(1) measure out ingredients into big bowl and mix (best with hands, I used gloves)
(2) add almond flour if mixture becomes to wet/sticky
(3) roll into balls (or shape into bars) and refrigerate
Customizes:
- you can use any type of nut butter, I used extra chunky so I did not have a problem with a wet batter, but if you use smooth nut butter or an oily brand you may need to use the almond flour
- the recipe usually calls for cinnamon and vanilla but was all out of those when I made this
- original recipe also called for 3tbs of flax meal but I didn’t have that either on hand
- the granola is optional, I threw that in to replace the flax meal
- you can add any type of mix-ins (nuts, M&Ms, pumpkin seeds, bee pollen, etc)
