2 cups Kodiak Cakes Buttermilk Power Cakes Waffle and Flapjack Mix

▢1 cup milk
▢1 egg
▢1 cup sweetened applesauce
▢1/4 cup honey
▢1 teaspoon vanilla
▢1/2 cup mini chocolate chips
▢2 tablespoons mini chocolate chips
Preheat oven to 350°. Spray muffin pan liberally with nonstick cooking spray.
Combine the pancake mix, cinnamon and baking powder in a medium bowl.

Beat the egg slightly in a small bowl. Whisk the milk, beaten egg, honey, applesauce and vanilla in large mixing bowl. Add the dry ingredients to wet ingredients and mix until just combined. Do not over-mix, muffin batter will be lumpy. Fold in chocolate chips.

Divide batter between twelve muffin cups, they will be almost full. Top with reserved chocolate chips, if desired. Bake for 18 – 20 minutes or until the edges begin to brown and the top springs back when touched.

Cool 4 – 5 minutes in the pan and then move to a wire rack to cool. Run a knife between the muffin and muffin cup to loosen the muffin.
