Buffalo flavor is something I’m constantly craving. Wings, chicken dip, you name it - I love it. This flatbread has all the flavor with fewer calories and is packed with protein. Pair with a crunchy veggie and some ranch for a quick and easy lunch. The chicken can be meal prepped ahead of time!

You’ll need:

2.5 oz cooked, shredded chicken breast

1 tbsp buffalo sauce

1 low carb tortilla

¼ cup mozzarella cheese

1 tsp italian seasoning

(Option to add some Greek yogurt or cottage cheese to your chicken for added protein)

Mix your shredded chicken with buffalo sauce and italian seasoning. Warm a low carb tortilla on a skillet with low to medium heat. Once warmed, spread half the mozzarella cheese on top, layer your buffalo chicken and then add the rest of the cheese. Cover and lower heat. Once cheese has melted, carefully fold your tortilla in half like a quesadilla.
