Egg bites! These little guys are easy to whip up and so great to have on hand for an easy and nutritious breakfast. I love meal prepping a batch on Sunday to have for the week. They also freeze super well. I’ll put one in the fridge the night before and it’ll be thawed by morning.

You’ll need:

+ 1/2 pound pork sausage, cooked and drained

+ 7 eggs, lightly beaten

+ 2 cups shredded cheese

+ 1/2 cup chopped peppers

+ 1/4 cup chopped onion

+ 3 cups shredded frozen potatoes, thawed

+ 2 tbsp butter

+ salt + Pepper to taste

Healthy Swaps:

+ Turkey sausage or chopped chicken sausage

+ Half eggs, half egg whites

+ No butter, use cooking spray instead

+ Half the amount of hash browns

+ Cottage cheese for extra protein (I use less shredded cheese and less hashbrowns when doing this)

+ Add spinach for some extra veggies

+ Skip the meat and bulk up the muffins with extra veggies like mushrooms, brocc, etc.

To make:

Preheat the oven to 400. Melt 1 tbsp butter in a skillet and add chopped onion, cooking until soft. Crack eggs into a bowl and whisk lightly. Add all other ingredients, including the butter/onion mixture. Take the other tbsp of melted butter and brush the cups of your muffin pan so that the egg mixture won’t stick. Spoon mixture into cups and bake for 22 minutes.
