I’ve tried this cake over and o we again and it never fails.
Ingredients
-200 g sugar
-1 tbsp lemon zest
-1 1/2 tbsp lemon juice
-1 tsp vanilla extract
-150 g butter, at room temperature
-3 eggs
-100 g all-purpose flour
-100 g almond flour
-1/2 tsp baking powder
-210 g blueberries
For the glaze
-100 g confectioners' sugar
-11/2 tbsp lemon juice
Instructions
1.Heat oven 350F. Grease an 8×4 inch loaf pan with butter or parchment paper.
2.In the bowl of a stand mixer whisk together the sugar, lemon zest, lemon juice, vanilla and butter.
Add the eggs one at the time and add the flour and baking powder. Add half of the blueberries and fold.
3.Spread batter evenly into the prepared cake pan. Sprinkle the remaining half of the blueberries. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
4.For the glaze, combine the ingredients until smooth, adding enough lemon juice for desired glaze consistency.
