Strawberry Watermelon Salad

Ingredients:

2 cups Watermelon cubed

2 cups Strawberry sliced

½ cup Cucumber diced

1 tbsp Fresh Mint Leaves finely chopped

1½ tbsp Honey

1 Lime juiced

1 tsp Lime Zest

1 tbsp Olive Oil

¼ tsp Black Pepper

¼ tsp Salt

2 tbsp Crumbled Feta

Here is how to make it:

• Make the honey lime dressing: Mix together honey, lime juice, lime zest, olive oil, salt and pepper. Set aside.

• In a large bowl combine the watermelon, strawberries, cucumber and mint leaves.

• Pour the honey lime dressing over the fruits and gently toss together. Sprinkle with crumbled feta and fresh mint leaves.

•Best if served within 24 hours.
