One of my favorite healthy meal ideas; pesto pasta! This is an easy dinner recipe that is also a healthy meal idea. Details below!
Ingredients
Pesto
• 2 cups fresh basil
• 1 cup fresh parsley
• 2/3 cups cashews
• 1 cup Parmesan
• 1/4 cup lemon juice
• 1 1/2 tsp salt (adjustto taste)
• 1/2 cup olive oil
• 4 cloves of garlic
• splash of water
Pasta
• 16 oz of pasta
• 1/2 diced onion
• 2 tsp butter
• 1 cup heavy whipping cream
Steps 1. Start cooking your favorite pasta by the direction on the box. In a food processor blend the pesto ingredients and salt to taste.
Step 2. Sauté the onions in butter. Then turn the heat off and add the pesto and heavy cream to the skillet with the onions. Taste the sauce and adjust salt.
Step 3. Fold the drained pasta into pesto sauce. Top with extra freshly grated Parmesan and enjoy!
