Lemon Poppyseed Muffins

Muffins and save time in the mornings as the kids go back to school!

Ingredients:

1/2 cup unsalted butter - softened to room temp

1 cup granulated sugar

2 large Eggland's Best eggs - room temperature

1 cup whole milk - room temperature

1/2 cup plain Greek yogurt

2 Tablespoons freshly squeezed lemon juice

Zest of 2-3 lemons

2 teaspoon vanilla

2 Tablespoons poppyseeds

2 ¼ cups all-purpose flour

1 ½ teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

3/4 cup whole milk

Bake for 12-14 minutes at 350 degrees
