Making Ice Cream Bread 🍨🍞

The internet said, let’s make Ice Cream Bread go viral and now I understand why🍨🍞 This recipe requires 2 (maybe 3 ingredients if you want to get creative) and uses the egg, milk, and cream within ice cream to produce essentially…a delicious cake! I tested this out with @traderjoes ✨NEW✨ Celebration Cake Gelato which tastes just like cake batter 🍰 to make this viral recipe. The sprinkles in the ice cream were a perfect touch to make this bread feel like a funfetti cake. As someone who has baked a lot, it doesn’t get any easier than this. Follow the recipe below👇

Ingredients:

- 2 cups ice cream (full fat)

- 1.5 cups self-raising flour (OR 1.5 cups all purpose flour, 2.25 teaspoons baking soda, and a pinch of salt)

- Rainbow sprinkles!

Recipe:

1. Soften ice cream in a bowl.

2. Add self-raising flour and mix together under smooth. If batter is too thick, add milk until it reaches a slightly runny texture.

3. Bake at 350F for 40 minutes.

Once baked, the cake doesn’t have as much of the original ice cream flavor so definitely pick a strong flavored ice cream. I want to try this out with a matcha ice cream next time ;) The texture of the cake is pretty on par with a regular loaf cake, but it is slightly denser and not as sweet. Overall, I was certainly impressed. The cake is still delicious to dig into!
