last nights dinner!

Such a great weeknight dinner! Just because it’s easy doesn’t mean you have to lose out on flavor!

Ingredients:

2 tbsp olive oil

1 qt grape or cherry tomatoes

1 shallot; minced

3-4 cloves garlic; minced

1/2 tsp each Salt, pepper, oregano, parsley, red chili flakes

4 servings orzo

2 cups chicken broth

1 cup water

1/3 cup Parmesan

1 tbsp butter

2 big handfuls of spinach

Juice from 1 lemon
