I'm not a full-on vegetarian by any means, but I do try and eat more plant-based meals wherever possible.
And one of my favourite plant-based meals is this broccoli pasta!
It takes just 4 ingredients to make but it's CRAZY good. When you cook down the broccoli, it gets so nutty and caramelised and develops such amazing flavours. You gotta try it!
Ingredients:
- Broccoli
- Pasta
- Extra virgin olive oil
- White wine or white wine vinegar
- Optional: chilli flakes / black pepper / chilli oil
How to make the dish (instructions for a 1pax portion!):
Step 1: Microwave a whole head of broccoli for 6 minutes to parcook it. Wait for it to cool, then chop it into small pieces.*
*Don't throw away the stem, you can chop it into small pieces and cook it as well! It's nice and tender when it's cooked.
Step 2: Add some oil (normal oil like peanut/canola/other oils, not extra virgin olive oil!) to a hot pan, and stir-fry the broccoli on high heat.
You can add some water to the pan as well - this creates stem and helps the broccoli to wilt a lot faster. Once the water evaporates, the broccoli will continue to brown!
If some of the tiny broccoli florets are stuck to the bottom of the pan and are browning/close to burning, don't panic! Just deglaze (meaning: add water and scrape the bottom of the pan). The florets will loosen and dislodge very easily - these brown/almost burnt bits add a lot of flavour to the dish.
This step will take approx 10-20 minutes depending on how high your heat is (crank it up!)
Step 3: Once the broccoli is brown and smells AMAZING, add 2 tbsp of white wine or white wine vinegar and salt, and continue frying for 1 minute. Taste it and season with salt again if not enough.
Step 4: As you're stir-frying, cook your pasta in a separate pot.
Step 5: Once the pasta is done, add it into the pan with the broccoli. Also add in some starchy pasta water and extra virgin olive oil. Go for 1-2 tbsp if you want the dish to taste a bit lighter, but if you want something decadent with a silkier mouthfeel, add 3-4 tbsp.
Stir to combine - the pasta water + oil should emulsify, and the pasta should look nice and glossy.
Step 6: Plate and top with chilli flakes / black pepper / chilli oil (optional). If you're using chilli oil at this step, use less EVOO in step 5 because you don't want the dish to be too oily!
I make this dish at least 2x a month - it's something that I can eat over and over again without getting sick of it. The flavours are really amazing!
