This is a down home, basic, country chili recipe. Quick, easy and hearty.
Ingredient 1 & Portion: Ground beef (gb),1 lb.
Ingredient 2 & Portion: Petite diced tomatoes, 14.5 oz can
Ingredient 3 & Portion: Dark red kidney beans, 15.5 oz can
Ingredient 4 & Portion: Chili beans, 15.5 oz can
Ingredient 5 & Portion: Sugar, to taste
Ingredient 6 & Portion: Chili powder, to taste
Ingredient 7 & Portion: Tomato juice, as needed.
Ingredient 8 & Portion: Onion (yellow or white), 1/2 large onion, chopped.
Detailed Steps:
* put ground beef and chopped onion in Dutch oven on med heat. Stir and break up gb until browned.
* drain grease from Dutch oven.
* add tomatoes, chili beans and dark red kidney beans (drain kidney beans first) and mix in with gb and onions.
* add tomato juice. You just want to cover your ingredients with enough juice to allow it to cook down leaving it a good consistency for chili.
* add chili powder and sugar. Start with a moderate amount. You can ALWAYS add more but you can’t take it away.
* cover and cook on low-med heat. Stir frequently and taste test! This is how you know if you need to add more chili powder and/or sugar for your liking.
Add your favorite toppings and enjoy!
