To make ceviche with raw shrimp, you rely on the citrus juice to "cook" the shrimp. Here’s how to do it safely and effectively….

I made a big batch because I wanted to last for 3 days ,lol

2 bags of raw shrimp, peeled, deveined, and finely chopped

1 cup fresh lime juice (optional )

1/2 cup fresh lemon juice (about 18 lemons)

1/2 red onion, finely chopped ( red onion is better)

1-2 tomatoes, diced

3 cucumber, peeled and diced

1/4 cup fresh cilantro, and parsley chopped

Salt and pepper to taste

3 Avocado - slices for garnish (optional)

Instructions:

Prepare the Shrimp:

Ensure the shrimp are very fresh and of high quality. Rinse the shrimp under cold water and pat dry. Finely chop them into small, uniform pieces.

Marinate:

Place the chopped shrimp in a bowl. Pour over the lime and lemon juice, ensuring the shrimp are fully submerged. The acid from the citrus juice will "cook" the shrimp. Let it marinate in the refrigerator for 2-3 hours. Stir occasionally to ensure even "cooking."

Prepare Vegetables:

While the shrimp marinates, chop the red onion, tomatoes, cucumber, and jalapeño (if using). Place them in a separate bowl and mix.

Combine Ingredients:

After the shrimp have turned opaque and have been "cooked" by the citrus juice, drain off some of the excess juice if desired. Add the prepared vegetables and cilantro to the shrimp. Mix gently to combine.

Season:

Season with salt and pepper to taste.

Serve:

Garnish with avocado slices if desired. Serve chilled with tortilla chips, on tostadas, or as a refreshing side dish.
