Occasion & Servings: dinner, serves 4
Ingredients:
• whole chicken, about 5lbs
• butter
• seasonings of choice - I used salt, pepper, onion and garlic powder, dried rosemary, and dried parsley
Detailed Steps:
• preheat oven to 425°
• pat chicken dry all over with paper towels (to get crispy skin!)
• take about 1/2 a stick of butter and soften
• add seasonings of choice to butter and mix - I didn’t measure anything but I’d say about 1tsp of each
• take the handle of a cooking utensil (or hands if preferred!) and separate the skin from the breasts to create a pocket
• take half of the butter and put it under the skin, spreading it around as well as possible
• use remaining butter on outside of the chicken
• bake uncovered at 425° for 15 minutes per pound of chicken (my 5.27lb chicken took an hour and 20 minutes!)
Additional tips/notes: Allow the chicken to rest for about 15-20 minutes after coming out of the oven. Serve with whatever sides you like! I roasted root vegetables.
