Ingredients :
• Sugar
• 1 can evaporated milk
• 1 can condensed milk
• 6 small/reg eggs
• Pure vanilla extract
Directions :
- Start by boiling a pot of water for your baño Maria.
- Preheat your oven to 345°
- Take a cup of sugar and add to a bare pan with a tablespoon of water and cook on low heat until your sugar is fully melted and a beautiful golden color (DO NOT overcook your sugar. The caramel sauce will burn & be no good.)
- Pour your sauce immediately into your chosen dish. I use a round cake pan. It will harden QUICK so spread it out fast by rolling your dish around in a circular motion. Set aside
- In a blender, add 4 whole eggs, 2 egg yolks, both cans of milk and a spoon of vanilla extract. Blend until completely incorporated and smooth
- Pour your flan mixture into the baking dish over your hardened caramel sauce.
- Cover your flan with foil
- Create your baño Maria by pouring that hot water into a bigger baking dish than the one your flan is in. Fill it up halfway.
- Carefully place your dish with the flan in the middle of the baño Maria.
- Place in your oven that’s set to 345° for an hour and 30 minutes.
- Carefully remove, insert sharp knife in the middle to make sure it’s done. If it comes out clean, it’s ready!
- Place on a cooling rack in your fridge for at least 4-5 hours!! I recommend overnight.
- Take your flan out of the fridge, run a sharp knife around the outer edge to loosen from the dish.
- Place a plate over your flan and carefully but QUICKLY flip over.
- You should hear the flan release from the dish.
