Ingredients :
• Pork Belly
• Vinegar
• Lime
• Adobo
• Sazon
• Pink Beans
• 1-2 Potatoes
• Sofrito
• Fresh Garlic
• Oregano
• Salt
• Garlic Powder
• Cilantro
• 8oz Tomato Sauce
• 2 Cups Water
• Avocado
• White Rice
Directions for Chicharrones :
1) Wash your pork with vinegar and lime in a bowl, allow to sit for a few minutes.
2) Rinse pork and pat dry!
3) Cut into small pieces - about 2 inches thick.
4) Season with Adobo & Sazon. The meat should have a reddish tint.
5) Heat your oil in a pot on medium heat.
6) Once heated, add your meat and let cook for 25 minutes or until crispy. Flip throughout cooking.
Directions for Habichuelas :
1) Chop 2 cloves of garlic
2) Heat a tablespoon of oil in a pot on medium heat.
3) Add garlic and 2 spoons of Sofrito to your pot. Allow to cook down a bit.
4) Add a pack of Sazon
5) Add in the tomato sauce
6) Continue to add your spices - Salt, oregano, adobo, garlic powder & cilantro.
7) Add in your chopped potato
8) Add in your can of beans (Rinse your beans) or your overnight soaked beans.
9) Last, add in a cup of water
10) Once boiling, turn heat to low, cover pot and cook for 30 minutes.
Notes :
- You can use calabacitas (squash) instead of potatoes.
- Most people add ham or bacon to their beans but I do not eat meat so I didn’t add it. ( I made the chicharrones for my gf.)
