Boiled peanuts are a Southern favorite and beloved worldwide in China, Senegal, and India. This version uses Chinese warm spices, but feel free to substitute whatever you prefer or omit the spices entirely.

1-2 pounds green peanuts

1 cinnamon stick

1 Chinese black cardamom pod

2 star anise

1 Tbsp Sichuan peppercorn

1 dried chili, optional

2 Tbsp sugar

2 Tbsp salt

2 quarts water

1. Wash the peanuts in water, scrubbing to remove all of the dirt. Change the water and wash again until the water turns clear. I washed my peanuts 3 times.

2. Add your peanuts to a large pot along with the cinnamon stick, Chinese black cardamom pod, star anise, Sichuan peppercorn, dried chili, sugar, salt, and water.

3. Bring the mixture to a boil over medium heat. Once boiling, reduce heat to low and simmer covered for at least 1 hour and up to 4, until your desired tenderness. Remove from heat and let the peanuts cool in the braising liquid.

4. Enjoy the peanuts hot or chilled. Store with or without the braising liquid, keeps up to 3 days in the refrigerator.
