Plums are now in season, but feel free to swap them for an equal amount of apricots or strawberries to make this summery cake.

250g honey

112g butter (1 stick)

140g buttermilk

2 large eggs

50g brown sugar

1 tsp baking soda

1/4 tsp baking powder

1/2 tsp kosher salt

240g all purpose flour

300g plums, pitted and cut in half

40g honey

15g water

1. Preheat the oven to 350F/175C and grease a 8 inch round cake pan.

2. Add the honey to a small saucepan over medium heat. Bring to a boil and cook for 5-7 minutes until deeply browned and caramelized. You will notice the color and smell change until it’s bordering on burnt. Immediately remove from heat.

3. Allow the honey to cool for a couple minutes then add the butter and buttermilk to the warm burnt honey. Once no longer hot, beat in the eggs and sugar. Add in the remaining ingredients and mix until no streaks of flour remain.

4. Pour the batter into the prepared cake pan. Place the plums evenly across the top of the batter. Bake at 350F for 45-50 minutes.

5. While the cake is baking, combine the smaller quantities of honey and water in a small microwave safe container. Microwave for 20-30 seconds until the honey is warm and stir to dissolve in the water. Set aside.

6. When the cake is done baking, set on a wire rack to cool for 20 minutes. Finish by brushing with the honey syrup prepared in step 5.
