These high protein chicken taquitos hit the spot every time and they are so easy to make. They are so delicious and are an easy weeknight meal or a great appetizer that everyone will love and enjoy. The best part is they are high in protein, so they keep you full and satieted.

Ingredients:
Makes 8 taquitos ( double recipe if you want more):
8 tortillas ( I used @sietefoods )
3 Chicken Thighs or rotisserie chicken ( Diced)
1 cup of greek yogurt
1 1/2 tablespoons of sriracha I used @yellowbirdsauce blue agave
1 lime
1 cup of shredded Cheddar cheese
Sprinkle of salt, pepper, garlic powder
Cilantro Lime Sauce:
1 cup of greek yogurt
1/2 head of cilantro
1 lime
2 tsp of white vinegar
Sprinkle of garlic powder, salt and pepper, chipotle powder
Directions:
1. Preheat oven to 425.
2. Season your chicken thighs with salt, pepper, garlic powder and paprika, and squeeze with lime and cook on medium heat on pan for about 5 mins on each side.
3. In a large bowl add your diced chicken, greek yogurt, cheese, sriracha, lime, and spices, mix and add one spoonful of the mixture to each tortilla with some cilantro. Add to a baking dish and cook in oven for about 20 minutes or until tortillas are crispy.
4. While taquitos cook, make your cilantro lime sauce, in a blender, add all your ingredients and blend until smooth.
5. Once taquitos are crispy, remove from oven, let cool and dip in cilantro lime sauce and enjoy!
