Ingredients:
1 medium butternut squash, peeled and cubed
2-3 sprigs thyme
4 cloves garlic
1-2 tbsp olive oil
1/2-1 cup chicken or vegetable broth
1 cup reserved pasta water
Salt and pepper, to taste
1/4 tsp cayenne pepper
1 lb. pasta
Instructions:
1. Preheat oven to 425F and line a baking sheet with parchment paper. Set aside.
2. Peel and cube the butternut squash, along with the garlic. Add to the baking sheet and drizzle with olive oil. Add salt, pepper, cayenne and the thyme sprigs. Roast for 40 minutes or until the squash is fork tender. Allow to cool slightly before adding to the blender.
3. Meanwhile, cook pasta according to package instructions. Reserve 1 cup pasta water for the sauce.
4. Add cooked squash, thyme leaves, peeled garlic cloves, and 1/2 cup chicken broth to a high speed blender or food processor. Slowly add in pasta water until reached desired consistency.
